Undenatured (native) type II collagen is collagen kept in its original folded shape. It is not used as a building block at all: given in small daily amounts, it is thought to act through the immune system in the gut, a mechanism called oral tolerance, encouraging the body not to react against its own joint collagen. Because the mechanism is immunological rather than nutritional, effective amounts are measured in tens of milligrams — a tiny inclusion, but only meaningful if the material genuinely is undenatured.
Hydrolysed collagen (collagen peptides) is collagen broken into small fragments. It is used in gram quantities and works nutritionally, supplying the amino acids and peptides associated with cartilage and connective tissue turnover.
Both forms have peer-reviewed research behind them in animals — undenatured type II collagen in particular has been studied in dogs, including in comparison with glucosamine–chondroitin combinations — and both appear in serious formulations. What doesn't work is the common shortcut: sprinkling a token quantity of one form while borrowing the evidence of the other.
